This is the step up from the single-grit Splash and Go. The 1000 grit side handles the main sharpening removing metal, rebuilding the bevel, and restoring a dull edge to working sharpness. Instructions for use

Before use, the whetstone should be moistened with water and
placed on a stable, flat surface. For optimal results, run the knife over the stone several times with light pressure, sharpening first one side of the blade and then the other. It is crucial to maintain the correct angle throughout the sharpening process.
